Carrot & Spice Loaf

Low Calorie, Gluten Free, Vegan, Dairy Free, Egg Free, Oil Free, Soy Free & Sugar Free. Easily adjusted to be nut free as well. This loaf recipe was inspired by wanting something to hit that sweet craving but without consuming useless calories. It's so important to put things into your body that will nourish it - not just filling the hole,or even worse, sending your body into attack mode.

As you will notice from the ingredient list, the loaf consists of food in their whole unprocessed forms. The only item that is processed is the small amount of buckwheat flour to help bind. Serves 10 (200 calories per serve).



2 Medium Carrots

1 Small Apple

10g Fresh Ginger

10g Fresh Turmeric

1 Ripe Banana

2 Tablespoons Sunflower Seeds

2 Tablespoons Chia Seeds

1 Teaspoon Baking Powder

1/2 Cup Almond Meal (swap with shredded coconut or other dry ingredient if needed

1/2 Cup Buckwheat Flour

2/3 Cup Date Syrup (Dates, water, chinese 5 spice. Simmer until dates are soft and then blend with the water. Maybe use 1 cup of dates and 1 cup of water to have some left over to add to other meals)


1/2 Cup Cashews (soaked in hot water for 5 minutes) (swap with whipped coconut cream if needed)

2 Tablespoons Date Syrup

1 Tablespoon Lemon Juice

Loaf Method:

-Preheat oven @ 180 degrees

-In a large bowl mash banana then mix in date syrup and baking powder.

-Grate in carrot, apple and then use the zest side of grater to grate in the turmeric and ginger.

-Add in remaining ingredients and mix well.

-Turn into silicon loaf tin or pre lined loaf tin and smooth out mixture into pan.

-Bake for approx 40 minutes or until your desired outcome

Icing Method

-Strain cashews and add to a blender with the other ingredients.

-Blend on high until smooth & thick. Add a little water while blended if needed to achieve the right consistency.

Allow loaf to cool off before icing. (or just slice the loaf and spoon on icing to each serve if you want to devour straight away!)
