Lemon, Cheesy, Broccoli & Quinoa Bake

Broccoli and Quinoa Bake

Makes approximately 6-8 portions


Ingredients:

2 Med Broccoli Heads

1 Cup Quinoa

½ tsp Turmeric

½ Bunch Herbs

1 Cup Cashews Raw (soaked)

2 ½ -3 Cups Coconut Milk

5 Cloves Garlic

½ Cup Nutritional Yeast

4 Tbsp Lemon Juice

Seasoning



Directions:

- Pre-heat oven to 180˚C

- Cook quinoa by placing quinoa and turmeric in pot and filling with water to a depth of your first knuckle above the level of the quinoa. Bring to boil, stir and reduce heat to low and place on a lid. Allow to absorb remaining water and cook through.

- In a blender add cashews, garlic, nutritional yeast, lemon juice, milk and seasoning and blend until smooth and well combined.

- Chop broccoli in small flowerets, roughly chop herbs and place into large baking tray, mix in quinoa, then pour over cashew cream mixture.

Bake for about 25min or until cream begins to set and dish has caramelized on top.
