Lunchbox Carrot, Apple & Banana Slice

3 Medium Carrots

2 Medium Apples

2 Medium Ripe Bananas

20g Fresh Ginger

10g Fresh Turmeric

1/2 Cup Desiccated Coconut

3/4 Cup Buckwheat Flour

1/2 Cup Chia Seeds

1/2 Cup Date Syrup (Cook dates in water & then blend)

2 Tsp Baking Powder

1/3 Cup Sunflower Seeds

1/3 Cup Pumpkin Seeds


Preheat oven to 180

In a large mixing bowl grate the apple, carrot, ginger, turmeric and mash the bananas.

Add in date syrup, baking powder, chia, buckwheat and coconut and mix until well combined.

Pour into a lined brownie tray (I use baking paper) and press out evenly into tray.

Mix together sunflower and pumpkin seeds and sprinkle over the top.

Bake at 180 degrees celcius for 30 minutes or until skewer can be removed cleanly.
