Scrambling for a delicious brekky?

Chickpea & Sweet Corn Scramble

Serves 3-4

What's In It?

1 Cup of Soaked Chickpeas

1 Corn Cob

1 Tsp Vege Stock Powder

2 Teaspoons of Nutritional Yeast

1/4 Lemon Juice

1 Teaspoon of Curry Powder


What to do?

Remove corn kernels from cob and put into small pot with strained chickpeas. Cover with water. Boil for approximately 15 minutes until chickpeas are tender. Strain off liquid and retain chickpeas and corn in the pot. Add remaining ingredients and coarsely pulse with stick blender and adjust any seasoning to your preferred taste. (Add 1-2 tablespoons of water or nut milk to adjust preferred consistency).

Serve with your favourite brekky ingredients and devour
